Creamy Custard Layer Cake

Creamy Custard Layer Cake

This creamy layered dessert is made with thin, tender pastry layers, a rich homemade custard filling, and a light whipped cream layer. Every bite has a soft, creamy center with just enough texture from the delicate baked layers.

It is the kind of old-fashioned dessert that looks simple but feels special when served cold. It is also a great make-ahead dessert because the layers become softer and more flavorful as they rest in the refrigerator.

Ingredients

For the Layers

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 2–3 tablespoons milk, if needed

For the Custard

  • 4 cups whole milk
  • 3/4 cup granulated sugar
  • 4 egg yolks
  • 1/3 cup cornstarch
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter

For the Cream Layer

  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Prepare the Layers

Preheat your oven to 350°F (175°C).

In a large bowl, combine the softened butter and sugar. Beat until smooth and creamy.

Add the egg and vanilla extract and mix again until everything is well combined.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture. Mix until a soft dough forms.

If the dough feels too dry, add milk one tablespoon at a time. You want a soft dough that can be rolled without being overly sticky.

Divide the dough into several equal portions. The number of portions depends on how many thin layers you want.

Roll each portion very thin on a lightly floured surface. Try to make each piece approximately the same size.

Place the rolled dough on baking sheets lined with parchment paper.

Bake for approximately 7–10 minutes, or until the edges are lightly golden. Don’t overbake them because thin layers can become hard quickly.

Allow the layers to cool completely.

Make the Custard

Pour the milk into a saucepan and heat it over medium heat. Don’t bring it to a hard boil.

In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and flour until smooth.

Slowly add some of the warm milk to the egg mixture while whisking constantly. This helps bring the temperature up gradually.

Pour the mixture back into the saucepan.

Cook over medium heat while whisking constantly.

After several minutes, the mixture will begin to thicken into a smooth custard.

Once thick, remove it from the heat.

Stir in the vanilla extract and butter.

Transfer the custard to a bowl and cover the surface directly with plastic wrap. This prevents a thick skin from forming.

Allow the custard to cool completely.

Prepare the Whipped Cream

Pour the cold heavy cream into a mixing bowl.

Add powdered sugar and vanilla.

Beat until the cream forms soft-to-medium peaks.

Don’t overbeat it, or the cream can become grainy.

Assemble the Dessert

Place the first baked layer on a serving plate or tray.

Spread a generous layer of cooled custard over the top.

Place another pastry layer over the custard and gently press it down.

Continue alternating layers of pastry and custard until you’ve used the baked layers.

For the top, spread the whipped cream over the final layer.

You can also add a little extra crushed pastry or crumbs over the top for decoration.

If some of the pastry layers crack while you’re assembling the dessert, don’t worry. Once everything is covered with cream and chilled, the dessert will still look beautiful.

Refrigerate Before Serving

This step makes a big difference.

Cover the finished dessert and refrigerate it for at least 6 hours, preferably overnight.

During this time, the custard slowly softens the pastry layers.

The result is a dessert that is much easier to cut and has that soft, creamy texture shown in the picture.

When you’re ready to serve, use a sharp knife to cut it into squares or rectangles.

For the cleanest slices, wipe the knife between cuts.

Tips for the Best Results

Keep the layers thin. Thin layers give the dessert its delicate texture.

Don’t overbake them. They should be lightly golden rather than dark brown.

Cool the custard completely. Warm custard can melt the whipped cream and make assembly messy.

Give it plenty of chilling time. Overnight refrigeration produces the best texture.

Don’t skip the vanilla. It gives the custard and cream a much richer flavor.

Use full-fat milk. It creates a smoother and creamier custard.

How to Serve

This dessert is best served cold.

You can dust the top with powdered sugar just before serving or sprinkle it with crushed pastry crumbs.

For a little extra flavor, you can add thinly sliced strawberries, bananas, or fresh berries between the layers.

A small drizzle of caramel sauce can also be delicious, although the traditional version is wonderful on its own.

Final Thoughts

This creamy custard layer cake is one of those desserts that gets even better after sitting in the refrigerator. The delicate layers absorb some of the rich custard while the whipped cream adds a light, airy finish.

It’s perfect for family gatherings, holidays, birthdays, afternoon tea, or simply when you’re craving an old-fashioned homemade dessert.

The best part is that you can make it a day ahead, keep it chilled, and simply slice it when you’re ready to serve. The longer it rests, the softer and creamier those layers become.
