Ingredients:
- 2 cups all-purpose flour
- 1 cup honey
- ยฝ cup brown sugar
- 2 eggs
- 1 tsp baking powder
- 1 tsp cinnamon powder
- ยผ tsp cloves powder
- ยผ tsp nutmeg powder
- ยฝ tsp ginger powder
- 1 tsp lemon zest or orange zest
- 1 tsp vanilla essence
- ยฝ cup crushed almonds or hazelnuts
Optional:
- Chocolate coating or sugar glaze
Method:
1. Heat the Honey and Sugar
In a pan, gently heat the honey and brown sugar until melted. Do not boil. Let the mixture cool slightly.
2. Mix the Eggs
Add the eggs and vanilla essence to the honey mixture and whisk well.
3. Add the Dry Ingredients
In a separate bowl, mix the flour, baking powder, cinnamon, ginger, nutmeg, and cloves. Add this dry mixture to the batter.
4. Add Nuts and Zest
Mix in the lemon/orange zest and crushed nuts.
5. Let the Dough Rest
Allow the dough to rest for 30โ60 minutes. The dough may feel a little sticky, which is completely normal.
6. Shape and Bake
- Preheat the oven to 180ยฐC (350ยฐF).
- Shape the dough into small rounds or cookie shapes on a baking tray.
- Bake for 12โ15 minutes.
7. Finish
Once the cookies have cooled:
- Drizzle with powdered sugar glaze
or - Coat with melted chocolate.
Tip:
Traditional German Lebkuchen cookies taste even better after 1โ2 days because the flavors become richer and deeper over time.
